Pancakes

Basic, quick, and easy pancakes. From Cooking for Engineers.

  • 1½ cups (190 g) all purpose flour mix
  • 3 Tbs. (38 g) sugar
  • 1½ tsp. (7 g) baking powder
  • ½ tsp. (3 g) salt
  • 3 Tbs. (45 g) melted, unsalted butter
  • 1½ cup (355 mL) milk
  • 2 large eggs
  • ½ tsp. (2.5 mL) vanilla paste

  1. Mix dry ingredients (flour, sugar, baking powder, and salt) in a mixing bowl.
  2. Whisk wet ingredients together (butter, milk, eggs, and vanilla) in another mixing bowl.
  3. Combine wet and dry ingredients. Whisk briefly - batter should remain a bit lumpy.
  4. Warm a skillet on medium heat. Add a small amount of butter. Once melted, add ¼ to ¾ cup batter to the skillet.
  5. Allow batter to cook until bubbles appear on the surface.
  6. Flip batter, cook another few minutes until both sides are appropriately browned.
  7. Serve with maple syrup, brown sugar, butter, or other desired toppings.
