Pumpkin (butternut squash) soup

My aunt Ally's recipe. Great in the middle of a cold winter.

  • 1 pumpkin (known as butternut squash in the US)
  • 1 large yam
  • 1 large white potato
  • 2 large carrots
  • 2 medium onions
  • 1 box chicken broth
  • 3 cloves garlic
  • salt and pepper, to taste

[edit] Preparation

  1. Combine all ingredients in a stock pot and bring to a boil.
  2. Once boiling, reduce to low and simmer, 3-4 hours.
  3. In a food processor or blender, blend until smooth.

Serves about 6 people.
